Wash and quarter the tomatoes. Drain the mozzarella and cut into slices.
Whisk the eggs with the milk and mix in the parsley.
Heat the butter in a medium-sized pan and let it “froth”. Put the egg mixture into the pan and let it set briefly. Spread tomatoes and mozzarella slices on top and cover and let stand for 3-5 minutes.
To serve, slide the omelette onto a plate and garnish with the fresh, chopped basil.
If necessary (no longer low-carb): Eat 1 wholemeal toast per serving with 1 tablespoon of cream cheese.
